8 chicken quarters

5 ounce jerk Spice

5 teaspoons chicken bullion

3 tablespoons olive oil

3 tablespoons lemon juice

1/4 cup vinegar

1/4 cup lemon juice

Direction: Preheat oven on high broil. Clean the chicken in cold water with the 1/4 cup vinegar, 1/4 cup lemon juice, drain the water off and rinse with plain cold water. Put the chicken in a large bowl. Add jerk seasoning, chicken bullion, olive oil and lemon juice, mix and blend spice into the chicken, arrange the chicken skin side up in a large baking pan, scrape the remaining spice from the bowl on to the chicken. Bring the rack to the middle in the oven, turn the heat down to low broil then put the chicken in the oven and let it cook for 25 minutes on low broil. Remove the chicken from the oven and turn the heat up to Hi broil. Turn the chicken on the other side and broil until nicely brown, then turn the chicken back on the other side to brown. Turn off the oven and remove the chicken from the oven. Serve with  Rice!
