Lexie Codfish and Broccoli Rabe Recipe

1 lb dried salted codfish (Pollack)

2 plum tomatoes chopped

1 large onion peeled and chopped

1 level teaspoon dried thyme

1 tablespoon crushed red pepper

1 tablespoon ground black pepper

1 bunch broccoli rabe wash and slice thinly

2 oz salt pork wash and slice thinly (Optional)

1 cup olive oil

Medium Dutch pot or deep skillet

DIRECTIONS: Remove the codfish from package and rinse with cold water then place in the pot and add enough cold water to cover the codfish. Place the pot with the codfish on high flame and boil for 5 minutes. Drain the water off and add cold water again, return to the flame and boil for 5 minutes again. Turn off the stove and remove from the flame. Drain off the water then add cold water to cover the codfish then set aside and let it sit for 5 minute in the cold water. Drain the water from the codfish and break the codfish into 1 inch size pieces, place in a bowl and set aside. On medium to high flame put the oil in the pot and let it heat. Add the salt pork, cover and brown on both sides. Add the codfish stir and let it fry for about 3 minutes, add the tomatoes and stir then sautee for 2 minutes, add the thyme, black pepper, crushed red pepper, onion and stir. Add the broccoli rabe and stir, cover and let it simmer on low flame for 5 to 6 minutes. Turn the flame and remove from heat. Serve with white rice and slice cherry tomatoes. Sprinkle the tomatoes with black pepper.
