2 3 1/2 lb red snapper

6 well ripe stem tomatoes chopped

2 large onions peeled and thinly sliced

2 sprigs scallion sliced

1 teaspoon dried thyme

2 tablespoons crushed red pepper

3 teaspoons course ground black pepper

1 teaspoon pimento

5 cloves garlic chopped

5 small carrots thinly sliced

2 tablespoon steak seasoning

2 fresh lemons squeezed and seeds removed

2 serving spoon white vinegar

Salt to taste

1 cup vegetable oil

1/3 cup white vinegar

1/3 cup lemon juice

1 newspaper or brown paper bags

Paper towel

Directions: If you purchased the fish at a fish market have them scale the fish including the head (if you eat the head) and cut the fish in 1 inch steak size. (If you buy the whole fish from Costco like I did you will have to scale it yourself). (You will want to take the fish outside to scale since the scale flies allover when you are scaling it). Once home use the vinegar and lemon juice and cold water to wash fish. To scale the fish, Place it on the paper and use a knife and start at the tail of the fish pull the scale towards the head in a scratch like motion do this all over the fish including the head until all of the scale is gone. Clean out all the inside of the fish, clean the inside of the head to remove any gill pieces left behind. Wash the fish in cold water with the 1/3 cup lemon juice and the 1/3 cup vinegar. Shake off the excess water and blot dry with paper towel. Place the fish on a cutting board and cut the fish into 1 inch steaks, Remove the fish head if you like. Use 1 tablespoon of the steak seasoning to sprinkle all over the fish then place in a large bowl and cover to marinate for about 1 to 2 hours. In a large Dutch pot on high flame and add the oil and heat. With a paper towel blot dry the fish to get rid of any water on the fish. Put 4 to 5 pieces of the fish in the hot oil, fry the fish until brown on both sides, Remove from the oil and place on a large plate. Continue with the same process until all of the fish is fried. If the oil is clean just add the following ingredients. (If there is burn residue in the oil remove from the flame let the oil cool and pour out the oil and clean the pot then add 1/2 cup of fresh vegetable oil and heat). Then add the following ingredients: Onions, carrots, tomatoes, scallion, black pepper, crushed red pepper, thyme, pimento, garlic and 1 tablespoon steak seasoning stir and sautée for 2 to 3 minutes, add the fresh squeeze lemon juice, the 2 serving spoons of vinegar and salt to taste, cover and cook for about 6 to 8 minutes. Add the fish submerging the fish under the mixture cover and cook for another 5 minutes. Remove from the heat and serve hot.
