6 lbs of soft medium beef steak tomatoes chopped

3/4 large sweet onion chopped

1 1/2 teaspoons crushed red pepper

3 tablespoons fresh chopped parsley

3/4 red pepper chopped

3/4 green pepper chopped

3/4 yellow pepper chopped

4 cloves fresh garlic chopped

1 tablespoon chicken bullion

4 tablespoons age parmesan cheese

Salt to taste

1 cup water

Deep large pot


Directions: Mix chicken bullion and the cup of water together and set aside. In the blender add a 1/4 cup of  the chicken bullion mix, add some of the chopped tomatoes and puree. Repeat the process by adding the rest of the tomatoes, 1/2 of the chopped red pepper, green pepper and yellow pepper, 1/2 of the chopped onion, chopped garlic and the parsley. Puree in the blender let it be a little chunky. Pour the tomato puree and the rest of the bullion mix into the pot and put on high flame and bring to a boil uncovered. Reduce flame to medium low, add the remaining red, green and yellow pepper, black pepper, crushed red pepper and cook for 30 minutes stirring occasionally. Add the cheese and cook for 10 more minutes on low flame. Sauce is ready. Turn off the stove. Remove from heat and serve hot with Linguine or any pasta of your choice.
