Fried Flounder Meal

2-6 pieces of fresh flounder fillet

1 cup finest yellow cornmeal (fine)

1 pinch of salt (optional)

1 pinch of black pepper (optional)

1 cup vegetable oil

1-2 lemon slice (fresh lemon) for "garnish"

1 cup milk or water

1 16 oz can Black beans

1/4 stick margarine

1 tsp garlic powder

1 tsp ground black pepper

Cooked white rice

Mix Salad or plain lettuce (washed)

Salad dressing

DIRECTIONS: Wash flounder with cold water, Pour milk or water (Which ever you prefer) in a bowl, put cornmeal in a bowl add salt and pepper to cornmeal, Mix cornmeal salt and pepper to blend. Put oil of your choice in frying pan, put pan on stove over medium flame and let the oil heat for 3-5 minutes (do not burn), dip flounder in milk or water then dip flounder into the cornmeal mixture. Put flounder in oil and fry lightly until medium brown, when finish frying flounder arrange them on a plate until ready to serve. Open black beans and pour it in a medium size pot, add margarine, garlic powder and black pepper then put it on medium flame and simmer for 7-10 minutes. Remove from flame and serve with steamed white rice. Put beans over the rice, on the same plate arrange mix salad or Lettuce with the salad dressing of your choice. Garnish with lemon and serve. P.S. I prefer Vidalia onion vinaigrette dressing, I find it to be a very Interesting taste with the flounder.
