1 15.5oz can red kidney beans

1 pack powder coconut milk

1 teaspoon dry thyme

1/2 serving spoon chicken bullion

5 cups rice

8 cups of cold water

1 tsp crushed red pepper

2 sprigs scallion clean and split in half 

1 teaspoon whole pimento grains

1 heaping teaspoon crushed garlic

Directions: In a medium pot put water, beans, coconut powder, crushed red pepper, chicken bullion, thyme, black pepper, scallion, garlic and the pimento, mix and cover the pot half way and bring to a boil on medium flame, while keeping an eye on it so it doesn't boil over. As soon as it comes to a boil reduce the flame to low and continue to cook for about 10 minutes. Add the rice and stir, let it cook uncovered for 10 minutes then reduce the flame to simmer and cook for 30 to 40 minutes or until the grains are soft. Fluff the rice then turn off the flame and remove from the heat. Serve with meat of your choice.
